Easy Rice Cooker Chicken Jalfrezi Rice


Love chicken jalfrezi from the takeaway? This easy rice cooker version gives you spicy tomato chicken rice in one pot for around £5. Perfect for busy UK evenings.

This is a simple budget-friendly fakeaway dinner using chicken, basmati rice, jalfrezi curry paste, tomato puree and peppers. Everything cooks together in the rice cooker, making it perfect for busy nights when you want flavour without too much washing up.

Ingredients

  • 2 chicken breasts, diced
  • 1 cup basmati rice
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 2 tbsp jalfrezi curry paste
  • 1 tbsp tomato puree
  • 2 cups chicken stock
  • 1 tsp garlic
  • 1 tsp paprika
  • Salt & pepper
  • Optional coriander

Instructions


Step 1: Wash rice until water runs clearer.
Step 2: Add rice into rice cooker bowl.

Step 3: Add diced chicken, onion and pepper.
Step 4: Mix stock, curry paste, tomato puree, garlic and paprika.

Step 5: Pour mixture into bowl.
Step 6: Cook on normal rice setting.


Step 7: When finished, leave 5 mins resting.
Step 8: Fluff rice, garnish coriander and serve hot.

Money-Saving Tip

Use frozen sliced peppers or leftover cooked chicken if you already have them. This helps keep the meal cheap while still giving you takeaway-style flavour.
